Potato Pancakes

4 cups Shredded Potatoes
1 Egg
1 small Onion minced finely or shredded
1 teaspoon Salt
3 TBS to 1/4 cup Flour
Vegetable Oil for frying

In a large bowl beat egg. Add the potatoes, onion, salt and flour. Mix well. Fry pancakes in a small
amount of hot oil. Serve with applesauce, sour cream or syrup.
