Fajita Chicken, Beef, Pork
Fajita Chicken, Beef, Pork
2 1/2 pounds raw boneless skinless chicken cut into walnut sized pieces
1/4 cup apple cider vinegar
1/4 cup oil
2 cloves garlic
3 to 4 tablespoons of taco seasoning mix (I have a recipe for taco seasoning if you want it)
Add all seasonings to large zip lock bag and mix well to blend.
Add chicken and mix well with the seasonings.
store in the refrigerator until ready to cook (can be done the morning before dinner).
When ready to cook, heat a large skillet with or without a lid and when hot, dump the contents of the zip lock bag (marinade and all) into the skillet and stir-fry until the chicken is done. You can reserve a little of the marinade (before adding the raw chicken) to stir-fry with traditional fajita style peppers and onions if you wish.
Great hot or even cold the next day over a salad with ranch dressing (add some sauted onions and peppers to your salad and you have a nice Mexican salad.
I like this recipe because it's so fast and easy to make. You can make it in the morning before you go to work and then just stir-fry it when you get home. Clean up is easy because you just throw away the zip lock bag.
