medium onion, finely-sliced .
1 tbsp olive oil .
4 medium raw potatoes, finely-cubed .
fresh ground pepper .
1 lb ground pork .
5 garlic cloves, minced .
1/2 red bell pepper, finely-sliced .
1 1/2 tbsps patis- type of fish sauce- would substitute orential fish sauce here .
1/2 tsp achiote powder (optional)
Procedures:

1 In a large pan, saute onion & garlic in oil.
2 Add pork & brown, making sure to separate ground pork thoroughly.
3 Add patis, cover & let simmer over med-heat/flame for 10 mins.
4 Peel & chop the potatoes into small 1/4 inch cubes.
5 Soak sliced potatoes In a large-ish water bath to wash off excess starch.
6 Drain & add potatoes & red bell pepper to pan.
7 Mix & cook for another 10 mins.
8 Add pepper to taste.
