Don't let the ingredients fool you...this is awesome! If you don't tell anyone what is in it, they will think it is apple cobbler.

Zucchini Cobbler

8 C. peeled, seeded zucchini
1 C. sugar
2/3 C. lemon juice
1 tsp cinnamon
mix together in pot and simmer until tender

In bowl mix:

3 C.flour
2 C. sugar
3 sticks butter
mix together then add
1/4 to 1/2 tsp cinnamon
put half of this into a 9x13 pan and pat down
pour zucchini mix over this then spinkle remaining dry mix over top

bake at 350 degrees for 45 min. to an hour til brown
