Chocolate Zucchini Bread

3 cups all purpose flour
3 cups granulated sugar
1 1/2 teaspoon baking soda
1 1/4 cups vegetable oil
1 1/2 teaspoons baking powder
3 squares of unsweetened chocolate
1 teaspoon salt
1 1/2 teaspoons vanilla extract
1/4 teaspoon cinnamon
3 cups grated zucchini
4 large eggs
1 cup chopped nuts

Preheat oven to 350 degrees F. Grease and flour 3 (9x5) loaf pans---set a side. In a double boiler melt chocolate and 1/4 cup vegetable oil---set a side too cool slightly. Combine flour, baking soda, baking powder and salt---set a side. Combine the sugar, cinnamon, eggs, vanilla and 1 cup of vegetable oil. Stir in the melted chocolate. Combine the wet and dry ingredients, mixing only until moistened. Add the zucchini and nuts, stirring just until combined. Bake for 55-65 minutes.

** You may substitute 3 (1 ounce) packages of pre-melted unsweetened chocolate
Zucchini bread can also be made in muffin pans.
