Dieters' Cheesecake

1 cup boiling water
1 pkg (3 oz) sugar-free lemon Jell-O
1 lb low-fat cottage cheese
2 tbsp fresh lemon juice
8 oz tub light Cool Whip, thawed
Graham cracker crust, if desired

Pour boiling water in blender. Add Jell-O; process until dissolved (be sure to keep center portion of lid off to allow steam to escape). Add cottage cheese, half at a time, blend until smooth. Pour into mixing bowl. Add lemon juice and Cool Whip; beat until smooth. Pour into graham cracker crust, or no crust if desired. Cover and refrigerate until firm. I use a 9" springform pan for this. I usually top with fresh berries (any kind are good).
