This is a simple and cheap dish and the children loved it. I fixed it with some whole grain bagels with garlic butter rubbed on them and placed them in the broiler. Wesley had cheese on his.

Cheesey Vegetable Soup 00310


1 cup shredded carrots-I used frozen
2 medium potatoes shredded
half of an onion diced fine
2 cloves of garlic minced
4 tablespoons of margarine
milk or water to cover- I used water
1 cup Velevetta shredded

I started out by melting the butter in the pan over low heat. I sweated the veggies until the pitates were done but the carrots were not mush. I then covered it with water. I let the water come to a boil and added the cheese. Stir so it doesnt burn or stick. I added salt and pepper to taste. Serve with crusty bread or bagels.

I want to make it with cream next time to see how it was but it was wonderful and warming this way.
