Creamy Cauliflower Soup

1 lb. chopped cauliflower
1 potato, peeled and chopped
1/2 cup reduced fat margarine
3 cups chicken broth, fat free
1 teaspoon salt
1/4 tsp. black pepper

Place cauliflower and potatoes in a saucepan and add water to cover. Simmer until vegetables are tender. Puree in blender, then return to saucepan. Add broth, margarine, salt, and pepper. Simmer over medium heat until hot. Serve with fat-free crackers.
Makes 4 servings
