Oatmeal Raisin Cookies

1 cup butter, softened
3/4 cup Sucanat (or you can use brown sugar)
3/4 cup organic cane crystals (or you can use white sugar)
Mix the above together until well blended and the add:

2 eggs
1 tsp. vanilla
Mix well

For cookies that spread out thin, use around 2 1/2 cups of dry ingredients. For more rounded cookies use closer to 3 1/2 cups.
I used 1 1/2 cups of flour and 2 cups of freshly rolled oats.
Add 1 tsp. of salt and 1 tsp. of baking soda.
Add in raisins. I used just over a cup.

Bake at 350 degrees for 10-12 mins.
