1 cup sugar
1 egg
2 tsp vanilla
2 1/2 cups self-rising flour
Confectioners' sugar

In a bowl, cream the butter and the sugar. Beat in the egg and the vanilla. Gradually add the flour. Roll the dough into 1-inch balls. Place 2 inches apart onto ungreased baking sheets. Flatten slightly with your fingers. Bake at 325 F for 17-20 minutes or until the edges are golden brown. Cool for 2 minutes before removing to wire racks to cool completely.
