Impossibly Easy Pizza Pie
Impossibly Easy Pizza Pie
6 servings
1 medium onion, chopped (1/2 cup)
1/3 cup grated Parmesan cheese
1/2 cup Original Bisquick
1 cup milk
2 eggs
1 can (8 ounces) pizza sauce
1/2 package (3-ounce size) sliced pepperoni
1/4 cup chopped green bell pepper
3/4 cup shredded mozzarella cheese (3 ounces)
Heat oven to 400 degrees. Grease pie plate, 9 by 1-1/4 inches. Sprinkle
onion and Parmesan cheese in pie plate. Stir Bisquick, milk and eggs until
blended. Pour into pie plate. Bake 20 minutes. Spread with pizza sauce; top
with remaining ingredients. Bake 10 to 15 minutes or until cheese is light
brown. Let stand 5 minutes before serving. Sprinkle with additional Parmesan
cheese if desired.
HIGH ALTITUDE (3500 to 6500 feet: Increase first bake time to 33
minutes.
1 serving: Calories 215 (Calories from Fat 115); Fat 13 grams (Saturated
6 grams); Cholesterol 95 milligrams; Sodium 650 milligrams; Carbohydrates 14
grams (Dietary Fiber 1 gram); Protein 12 grams.
Percent Daily Value: Vitamin A 10 percent; Vitamin C 14 percent; Calcium
24 percent; Iron 6 percent.
Diet Exchanges: 1 Starch, 1-1/2 Medium-Fat Meat, 1/2 Fat.
Betty's Tip:
Doubling any Impossibly Easy Pie recipe is a breeze. Just double the
ingredients and bake in either two pie plates, 9 by 1-1/4 inches each, or in
a 13 by 9 by 2-inch baking dish. If you use the baking dish, bake the pie
for 10 minutes longer than the recipe indicates.
