Pinto Bean Fudge

6 squares unsweetened chocolate
1 C. butter
1 tsp. vanilla
1 can vegetarian refried beans
2 lbs. powdered sugar
1 C. chopped nuts

Melt chocolate with butter; add beans & vanilla, mixing well. Beat in powdered sugar & nuts, then spread in a 9 x 13 pan. Chill, then cut in squares.

You can't taste the pinto beans, and if you mash any whole ones before adding, any remaining lumps are perceived as nuts. You feel virtuous, knowing you are getting extra protein and fiber
in addition to a treat for your chocolate craving!
