I have some Cyanine peppers I want to dehydrate and wonder if anyone here has done that? Do I need to take the seeds out or can I just put them in the dehydrator whole?

I prefer to de-seed mine, but that is because I usually grind my peppers after they are dry to make a dry powder for seasoning.  I think they grind better seed free.

If you do decided to powder them, grind them and then return the powder to the dehydrator for a short time to get it thoroughly dry for best results.

You can also not chop them as fine and make pepper flakes... like at the pizza place.  Very Happy

for Cayenne peppers, just string them up with mono-filament (through the cap with a sewing needle) and let them dry slowly, whole. When they are about half dried you can either split them and clean out the seeds (and transfer them to the dehydrator then to an air tight container) or let them dry completely and powder the entire pepper (seed and all)

Last year, hubby pulled a whole plant and hung it upside down in the basement. Only problem being, it's still hanging there!

I've dried pepper like Keith suggested, I've hung them near the wood stove to aid in their drying fully.

I've had good luck using a small electric coffee grinder to powder my dry peppers. To clean the grinder just  add a few bits of torn up bread and run it a bit. The powdered peppers are picked up by the bread leaving you with a clean grinder. Wink

Whenever I have tried to string and hang my peppers to dry they have always ended up with mold.  Mad   Perhaps it is just too humid in our area, but even when I thought I had them spaced well apart and crispy dried they always eventually molded.

I have much better luck with the dehydrator and making either the powder or the flakes.

they do need to be hung where there is some air movement, nearly constantly...furnaces, heaters, wood stoves etc set up a natural convection type air flow. A light bulb in a closet can do the same thing. Still air does promote mold growth
