All Geeks Unite --- Pi Day is coming!
Anyone else on this forum celebrate Pi Day? Our family always gets a kick out of March the 14th (3.14). Every year we use it as a great excuse to eat lots of pie!
Last year I made pie and bought pie and our whole extended family got together for a feast. Our Geek even used it as a class project for college.
If you like to have a good time ... and eat pie ... why not make it a tradition like we have.
Now lets share those recipes!
Egg Custard Pie
[ltr]• 3 cup milk[/ltr]
[ltr]• 6 fresh eggs[/ltr]
[ltr]• 1½ cup sugar[/ltr]
[ltr]• 2 Tablespoon cornstarch [/ltr]
[ltr]• Pinch of salt[/ltr]
[ltr]• 2 teaspoon vanilla (real vanilla is gluten free
[/ltr]
Combine all ingredients adding vanilla last. Whip well.
Prepare a cake pan that is large enough to hold your pie pan. Add some water so that it will come about half way up your pie dish when full and put it on the oven rack.
Now add the pie pan with the crust inside and carefully fill the empty crust with your custard mixture. I like to work directly on the oven rack so I don't have to move things and spill them.
Bake custard pie in this double boiler (bain-marie) at 350 degrees for about 30 minutes until a knife inserted in the pie comes out clean.
Remove from oven and let cool.
Garnish with some cinnamon or nutmeg if desired.
Yum!

Sounds like I may have to start this as a new tradition. It's as good as any reason to partake in a nice slice of pie. Your recipe sounds delicious, I'm gonna have to give it a whirl and see how we like it.

I'm making a Dutch Apple Pie. I found the recipe here http://www.tasteofhome.com/recipes/favorite-dutch-apple-pie I hope it's good as it was very easy to put together.

I was going to make peach cobbler. I got as far as getting the pie filling upstairs and onto the counter, but that's as far as I got.

We really liked the pie recipe I used. I added some Penzy's Apple pie spice mix to the filling.

Sadly no pie for me either.
I got all of the makings for a Chocolate Mousse Pie ... even a GF crust, then I started swelling up again and have spent about half of the day in bed.
Not fair.

Me too, because if I do it is going to be Pi Day 2.0. I am eatin' me some chocolate pie!

I was really excited because our local Hy-Vee actually had a GF graham cracker crust ready made. I am really liking that store more and more. They have a "health market" area and are getting in more and more GF items.
I went to bed early last night and slept pretty well. I SHALL have pie today!
