We always eat a snack after church on Sunday night. So I thought I'd share with you all what I came up with for last night.

I'll call them Chicken-Vegetable Cups.

 I didn't measure the ingredients but I can tell you about how much we used.

1/2 Chicken Breast (Cooked and cut up into small pieces)
1 Carrot (Shredded)
1 1/2 Broccoli Heads (Cut into small pieces)
1/2 Onion (diced)
1 Apple (Cut up)
Cheese (I used Mozzarella since that was what we had on hand)
Ranch dressing
Flour Tortillas (I made my own since we didn't have enough other ones)

Place your tortillas in Texas Muffin pans.

Combine chicken, carrot, broccoli, onion, and apple. Mix in some Ranch dressing. Fill the tortilla cups and top with cheese.

Bake at 350 degrees for about 10 minutes or so.

Enjoy!

I think with this recipe one could really put whatever they wanted in it. I mentioned to my family about some cheese sauce and some other suggestions were cheddar cheese and pineapple. So be creative and let us know how it turns out:) 

I'll include a picture of the Blueberry Muffins I did for our main meal of the day!
