The proof is in the tasting
Well, we finally got a chance to taste some of our goat milk cheddar cheese and have to say, it's really good. It's got a bit of a tang to it, but that's not a problem for me. We are giving some away to a couple of our neighbors for Christmas gifts and I sent some to my parents. Hope it ships well.

I wonder how well it would ship. Next time I make some, if you remind me, I'll make sure to send you some. Do you like any other types of cheeses? I'm thinking the next time we'll make some provolone.

I'll pay you for some out of your next batch. I love most cheeses, like cheddar, mozzarella, swiss, provolone. If you ship it during the winter, with some dry ice and overnight it, it should be fine.

If I'm not mistaken, the provolone has to age about 4 months and we probably won't make it until after the New Year, although Joe is taking off for a week during that time, so we may be able to get it started right after Christmas. So, it'll probably be in the Spring before it'll be ready to ship. I won't charge you for it though, just remind me. I'm sure I'll be posting when we get it made.
Wish you lived closer, I'd be able to give you some mozzarella any time because we make the 30 minute mozzarella.
