Oven Fried Chicken

3 Tbs. Buttermilk
1/4 tsp. Dijon Mustard
dash Garlic Powder
dash White Pepper
dash Salt
2 Chicken Cutlets pounded
to 1/4 inch thick
1/2 cup +2 Tbs Cornflake Crumbs
2 tsp. Vegetable Oil divided
1 1/2 tsp. Lime, Lemon or Orange Juice


Preheat oven to 450*F degrees.
In a small bowl combine buttermilk, juice, mustard and seasonings. Dip chicken into the mixture coating both sides then into the crumbs. Spray a baking pan with Pam. Put chicken on the pan and drizzle each piece with 1/2 teaspoon oil. Bake 8 to 10 minutes. Turn each piece over and drizzle remaining oil on each piece. Bake an additional 8 to 10 minutes.
