Banana Cream Pie
Banana Cream Pie
2 Large Eggs
1/2 Cup + 2TBSP Sugar (Separated)
1/4 Cup Flour
2 Cups Scalded Milk
1 TBSP Vanilla
1/2 Cup Butter or Margarine
5 Firm Medium Bananas
1 Baked 9" Pie Shell
1 Cup Whipping Cream
In a heavy sauce pan, whisk together eggs, 1/2 cup sugar & flour until pale lemon in color. Gradually beat in the scalded milk. Cook, stirring constantly over medium heat until froth thickens ( about 5 minutes). Remove from heat. Stir in the butter or margarine and the vanilla until blended. Place plastic wrap directly on the surface of the filling to cover completely. Refrigerate promptly until well chilled. When filling is well chilled, slice the bananas reserving some for garnish. Fold the remaining bananas into the filling and spoon into the pre-baked pie shell. Beat 1 cup of whipping cream and 2 TBSP sugar until stiff peaks form. Spoon the whipping cream onto the pie & garnish with reserved bananas.
