Japanese Steakhouse Style Ginger Salad Dressing

1/2 cup each minced onions, peanut oil
1/3 cup rice vinegar
2 Tbsp each water, minced fresh ginger, minced celery, ketchup
4 tsp soy sauce
2 tsp each sugar, lemon juice
1/2 tsp each minced garlic, salt
1/4 tsp fresh ground black pepper

Combine all the ingredients in a blender.

Blend on high speed for about 30 seconds or until all of the ginger is
well pureed.

Makes: 1 3/4 cups
