MAKEOVER PECAN UPSIDE DOWN CAKE
MAKEOVER PECAN UPSIDE DOWN CAKE
20 ServingsPrep: 20 min. Bake: 30 min. + cooling
Ingredients
1/2 cup reduced-fat butter, melted
1/2 cup packed brown sugar
1/4 cup dark corn syrup
1-1/2 cups pecan halves
1 package (18-1/4 ounces) butter pecan cake mix
1 cup reduced fat Sour Cream
1/3 cup unsweetened applesauce
2 eggs
2 egg whites
1 teaspoon vanilla extract
Directions
In a small bowl, combine the butter, brown sugar, corn syrup and
pecans. Spread evenly into a 13-in. x 9-in. baking pan coated with
cooking spray. Set aside.
In a large bowl, combine the remaining ingredients; beat with a mixer
on low speed for 30 seconds. Beat on medium for 2 minutes. Transfer
to prepared pan.
Bake at 350° for 30-35 minutes or until a toothpick inserted near
the center comes out clean. Cool for 5 minutes before inverting onto
a serving platter. Serve warm or at room temperature.
Yield: 20 servings.
