Canning Recipes

Wow, that is quite a collection of recipes. I will have to go back and look at some that caught my eye,later.
Speaking of canning I just canned a batch of meat yesturday. I was able to get a really good deal on some beef round roast. I canned it to see if I could do it. And so far it turned out good,there was only one thing, I have a little more air space in the jars than I was exspecting. I hope that will not cause a problem with the safety of storage. Every thing seemed to settle down in the jar/shrink down. The meat itself is covered by liquid/broth, but instead of 1" of head space I have 3". Well, it was my first time at canning meats other than in soups. May be it will be ok. And I will know better next time.
