http://schmidling.com/making.htm This is something my kids just love to do. It is not that hard. All you need is some cheese cloth, a candy themometer, milk, salt and vinegar. Oh and also patience. It works best to ladle the milk slowly into the cheese cloth. If you go to fast you tend to lose alot of the cheese. You can not even tell there is vinerag in the cheese if you use the amounts they listed. I added a pint of heavy whipping cream to ours last time to up the fat lever and used whole milk. It made a creamy spreadable cheese that you could add any types of herbs to and use on crackers or in lasagana.

I've seen recipes that use vinegar or lemon juice but was afraid it would taste like vinegar or lemon juice. We'll have to give this a try. Although I think our next attempt is going to be hard cheeses.

We used goat milk and regular milk doing this and the cheese did not taste like lemon or vinegar. I dont know about the whey but in the video for making it with lemon juice the man said the whey makes great soup stock so I am going to try it soon.
