You must have a cast iron skillet to make this right. I have used a casserole dish but it sometimes stick to it.

Large cast iron skillet
8 eggs
cheese of your choice
veggies of you choice (already cooked)
meat of you choice (Already cooked and optional)
butter and olive oil

Place skillet in oven and preheat oven to 350. When the oven is heated add butte and olive oil to skillet and place back into oven. Scramble eggs in a bowl. Add veggies and meat to eggs. Pour into skillet. Cook until just about set. Add cheese to top. Let cheese melt. Remove from oven and remove from skillet to a plate or cut into wedges in the skillet. Serve. It is really good cold too.

I put aspargus, onions, mushrooms, peppers, ham, swiss cheese, tomatoes, cabbage, I have even put crab in it. Just use your imagination and let it become your own creation.
