Here are a few recipes.

Fish sausage
6 ounces (1½ cups) cooked white fish (cod or halibut are great)
2 ounces ( 1/2 cup) peeled prawns
2 ounces (1/2 cup) mushrooms
2 ounces (1/2 cup) breadcrumbs
2 lightly beaten eggs
4 ounces (1 cup) fine oatmeal
2 teaspoons dried parsley
Salt and pepper to taste
Cooking oil
A small quantity of flour (1/4 cup) and butter to taste
Fish sausage:

Remove any skin and bones from the fish. An easier way to do this would be to buy filets, but it depends on how fresh you want your sausage. Finely chop the cooked prawns. Chop and fry the mushrooms in a little butter.
Using a large bowl, break up and pound the white fish, chopped prawns, cooked mushrooms, breadcrumbs, parsley and seasoning, mixing this together with half the beaten egg.
With floured hands, form the mixture into a number of sausage shaped portions. Dip into the remaining beaten egg and roll in the oatmeal. Fry in hot, shallow oil for about 6/7 minutes, turning regularly until golden brown. drain onto rack or paper towles.

Spicy Homemade Meat or Fish Sausages
Makes 14 Sausages / Good for 3-4 persons
500 grams ground meat or ground fish fillets
1 tbsp or more freshly-ground black pepper
(If mortar and pestle are available, pound some black peppercorns in it)
1 tbsp or 1/2 tbsp chilli flakes or thinly-sliced fresh chillies
(One could use more chilli flakes, according to taste. If using fresh chillies, be sure to put on one of those disposable plastic food handler's gloves before slicing the chillies.)
1/2 tbsp each of cinnamon powder, cumin powder, and allspice powder
1/3 tbsp brown sugar
1 piece small red onion or a few shallots, peeled and grated
1/3 tbsp fennel seeds
juice of two medium-sized limes or one large lemon
a sprinkling of sea salt or iodized salt to taste
butter or oil, if frying the sausages
sliced lemons, tomatoes, red or yellow onions, carrots, bell peppers (optional)
Put the ground meat in a deep bowl. If using ground fish fillets, check for fish bone parts, just to be on the safe side of things.
Add all the other ingredients into the ground meat, except the butter or oil and the optional vegetables. Mix well using a wooden spoon or put on a pair of plastic food handler's gloves and thoroughly hand-mix the meat, spices and lime or lemon juice. Patty consistency should be soft and juicy-looking, not dry.
Scoop up some of the meat mixture and shape it into a 4-inch long, medium-sized sausage patty. Put patty on ready plate and make more patties. Alternatively, thread a bamboo skewer through a slice of lemon or other sliced vegetables, followed by the patty. Press the meat lightly against the skewer, to make sure the mixture does not fall off during cooking. This recipe allows for at least 14 sausage patties.
Lightly oil the stove-top grill before putting it on medium heat. Cook patties, turning them over a few times, for even cooking. If frying, melt butter or heat up the oil in the pan. Any cooking oil may be used: olive, corn, soybean, coconut or groundnut oil.
The patties are ready, when they turn golden to dark brown. Fish patties tend to cook quicker than meat patties.
Arrange the cooked sausages attractively on a platter. Garnish with a sprig of mint or sprinkle with chopped fresh coriander. Can be eaten hot or cold.

Thai fish cakes
500 grams white fish meat (e.g. ladyfinger) , minced or chopped
1 egg
1/2 cup string beans, sliced fine
3 tbsp. fresh kaffir lime leaves, minced or chopped
1 tsp. sugar
1 tsp. salt
1 tbsp. of red curry paste
3 cups cooking oil for frying

Put all the ingredients in a large bowl and mix well knead with the hand until it sticks.
Spoon the mixture 2 tbsp; shape into small patties about 3" in diameter and deep fry in vegetable oil until golden brown.
Serve with Sriracha chili sauce, sweet chili sauce or cucumber relish.
Ingredients for Cucumber Relish

1 cup diced cucumber
1/2 cup ground roasted peanuts
1/2 cup sugar
1/2 cup white vinegar or rice wine vinegar

Mix sugar and vinegar in the pot and heat.
When the mixture comes to the boil, remove from the heat and allow to cool.
Spoon into a cup, add diced cucumber and top with ground peanuts.


There are several diffrent fish cakes. Is there one in particular you are looking for. They even have them with potatoes in them.
