We picked 52 dozen ears of sweet corn yesterday. 10 dozen are going to my sister. We put up the rest of which some will go to my two married daughters and their families. Here are some pictures:

Amen! What a wonderful harvest.
I see that you are freezing some of it, have you ever tried to dehydrate any? I dehydrated corn for the first time last year and I think it is my new favorite way. It dries well and comes back in near perfect condition. Plus it is easier to store dried than any other way.
I prep it for the dehydrator exactly like you are doing it to freeze.

Farmfresh, does it rehydrate like canned/frozen to use as a side dish?

What a wonderful sight, your car packed full of nice, ripe corn. Do you do anything special with the cobs once you have put up the corn?

Nice looking corn. Our corn didn't do very well so we'll probably go to the farmers market and buy some this year.

We bought a dehydrator a few months ago and my wife has talked about drying some corn, but so far we have not done that. I'll be sure and tell her what you said about it and she will probably try drying some. There will be more corn coming yet. We planted a small patch of it a couple of weeks later than this corn so I should be ready soon.

I just dump the cobs onto our compost or in the garden and till them in in the fall or spring. I wish I had a chipper/shredder, then I could run them through that and help speed up the breaking down process.
I think this is the best corn success I have ever had.

Yes it does. I was really surprised about that too. It is sweet and even a little crispy .. just like fresh corn. You would be amazed at how much corn you can store in a re-purposed Gatorade bottle as well.PATRICE IN IL wrote:Farmfresh, does it rehydrate like canned/frozen to use as a side dish?

Tell her to try a small batch Rohn. I think you will like it. Also tell her to do it at about 135 or 140. If you get the dehydrator too hot or leave it too long it tends to go brown as the sugar in the corn caramelizes. Even then it still tastes good.
