Ingredients:
1 egg
1 cup sugar
1 cup peanut butter
Directions:
Mix 1 lightly beaten egg, 1 cup sugar, and 1 cup peanut butter. When well mixed, take a tablespoon or so of dough, roll it around in your hand, and put it on a lightly greased baking sheet. Press down with a fork.
Bake in a 350 degree F oven for 8 - 10 minutes. They are out of this world, and noone will ever guess that they are so easy. As a real plus, they are also gluten free.


Servings: 18-20 cookies
Prep Time: 5 Minutes
Cooking Time: 8-10 Minutes

Source: I've seen this recipe in several places over the years. I don't know it's origin. it certainly wasn't me, though I wish I could take credit.

This recipe also shows up to use with Hershey's Kisses. You roll the dough into balls and place them on a cookie sheet but don't press down on them. Then bake as directed above. After you take them from the oven you press an unwrapped Hershey's Kiss into the center of the cookie. The heat from the hot cookie will melt the chocolate but it firms back up after they cool. In my opinion the "Kiss" is a bit too much chocolate for the cookie so next time I make them I'm going to use the new Hershey's Drops, they are small circular chocolate candies.
