Chocolate Truffles

8 ounces cream cheese, softened
3 cups confectioner's sugar, sifted
3 cups semi sweet morsels, melted
1 1/2 teaspoons vanilla extract

In a large bowl beat cream cheese until smooth, Gradually beat in confectioner's sugar until well blended. Stir in melted chocolate and vanilla until well combined and no streaks appear. Refrigerate for 1 hour. Shape into 1 inch balls and either dip in melted chocolate, roll in chopped nuts, roll in shredded coconut, cocoa powder or roll in sprinkles.

To change the flavor omit vanilla extract. Divide mixture into 3 separate bowls and add 1 tablespoon of liqueur or candy flavorings/extracts such as almond, coffee, orange, rum etc. to each bowl, mix well to combine
