Pudding Sugar Cookies

1 cup butter, softened
1 cup canola oil
1 cup sugar
1 cup confectioners' sugar
2 eggs
1 tsp vanilla
1 pkg (3.4 oz) instant lemon pudding mix
or instant pudding mix of choice
4 cups flour
1 tsp cream of tartar
1 tsp baking soda

In a large bowl, cream the butter, oil, and the sugars until light and fluffy. Beat in the eggs, vanilla, and the dry pudding mix. Combine the flour, cream of tartar, and the baking soda. Gradually add to the creamed mixture. Mix well. Drop by tablespoonsful 2 inches apart onto the ungreased baking sheets. Flatten with a glass dipped in the sugar. Bake at 350 F for 12-15 minutes or until lightly browned. Remove to wire racks to cool.
Makes 7 dozen
