Eggless Mayo
Here' my newest favorite recipe for eggless mayo:
•3/4 cup soy milk
•4 tablespoons lemon juice
•1/4 teaspoon salt
•1/4 cup canola oil
•1 1/2 teaspoons dijon mustard
Pop it all into the food processor/blender and let it go for a minute or so ... until it gets nice and creamy! The lemon juice is the key to this recipe.
When I first made it, I didn't have any soy milk so I used tofu with some water ... worked just fine. I'm not sure of the exact measurements ... I just tossed it in and then added water until the "mayo" was the consistency I wanted.
I've also substituted plain yogurt for the soy milk ... it works, as well ... I found that adding a pinch of sugar took the tart out of it.
I've also made it using some soy milk and white beans ... I didn't have enough soy milk so improvised with white beans. Worked great and gave it a protein boost ... just add water until it gets to the consistency you want.
