Feta goats milk cheese
1 gallon fresh goats milk
1/2 c vinegar
any spices you would like to add
10 qrt pot
cheese cloth
colander
Using fresh goats milk. Strain it. Then bring to almost a boil. Let it form a skin on top and when it starts to dance turn off heat. Gradually stir in 1/2 c vinegar. This makes curds. Let it sit for one hour then strain. You can leave it a little wet or let it strain a while longer and make it a drier cheese. Add spices and serve or form into a wheel and place in fridge.
