sumac the undiscovered condiment

I was reading on this article in Countryside Magazine. I thought it was poisonus? But they use it in place of vinegar and lemon juice in the middle east? In the S we have a variety called the stag horn. Its berries can be used to make a lemon aid. Amy one use it? Still reading on it. Found this intresting.

Found recipes in the magazine for something called Za'tar. It is a mix of thyme, sumac chickpeas,sesame seeds toasted, marjorium and salt. I will post these tommoow and the uses of it.

Za' tar
1 c dry puliverized thyme
1 c sumac
1/4 c finley pulverized undalted roasted chiclpeas
43 TBS seasame seeds toasted
1 TBS marjooram
2 Tsp salt
Mix and store in a jar until use.

It can be used on toast (with a little olive oil)
In pies, yogurt

Sumace can be used in salads, to stuff grape leaves with and with chicken. Musakhkhan is the dish it is used in for chicken. Mihshee Waraq in the grape leaf dish, Fattush is the salad and salata basal wa summaq is the onion and sumac salad

There is a type that is poison. I use staghorn sumac

Poison sumac is poisonous. Other types are not. We have stag horn sumac and winged sumac around here. I've tried stag horn, and don't really like the taste of it.

I've never tried any other than stag horn, but it definitely needs honey with it if being made into a tea or cold drink

We used to pick it for "lemonade". And for a wonderful "lemon" meringue pie.You can harvest it after the red is in good color, but don't pick it soon after a storm, water washes the flavor off.You can dry the stalks and store them for use in the winter.The pie is a funny kind of gray/pink color, but the taste is good.It takes quite a bit to get good flavor for pie,and the lemonade tastes much better with honey added.
