Carron''s "Killer" cookies
Carron's "Killer" cookies
1 1/2 cups flour
1 tsp baking soda
1 tsp baking powder
1 tsp salt
1 cup vegetable shortening
1 cup sugar
1 cup light brown sugar
2 eggs
1 tsp vanilla
2 cups old-fashioned oats
2 cups Rice Krispies cereal
1 cup sweetened flake coconut
1 bag (6 ounces) semisweet chocolate chips
Heat the oven to 350 F. Place parchment paper on 4 baking sheets and set aside. In a small bowl, blend the flour, baking soda, baking powder, and salt with a whisk. Set aside. In a large bowl, beat the shortening and both of the sugars on medium-high speed about 3 minutes or until light and fluffy. Add the eggs, one at a time, beating well after each addition. Beat in the vanilla. On low speed, gradually add the flour mixture and beat until just combined. Stir in the oats, Rice Krispies, coconut, and chocolate chips. Form the balls with 2 tablespoons of dough. Place 2 inches apart on the prepared sheets.. Bake for 10 minutes. Cool on the sheets for 5 minutes then transfer to cooling racks to cool completely. Makes about 4 1/2 dozen
