Veggie Lasagna- no pasta

Since we cut out alot of carbs in our diet we came up with this veggie lasagna. You could use any kind of veggies. This is what I found at the grocery store. I did not cook ant of them before I layered it. You can pan fry the veggies with a coating of corn meal in a little oil.




Bekka's Sauce: One large can of tomatoe sauce, two cloves garlic (crushed), 1/3 onion diced, 2 tsp oregeno, 1 tsp parsley, and one diced fresh tomato- She sauted the onions and garlic in a little oil. Added the rest and cooked it down. She did not add any salt cause the sauce had enough. I used kroger brand tomato sauce.

The veggies: really thin sliced zuchhini, egg plant, mushrooms, and fresh tomatoes.

I started with the sauce then layered all the veggies and added shredded cheese. repeated the layers tomato, veggies and cheese and topped with tomato sauce. Baked at 350 until the veggies were tender and the juice was all bubbly. I then topped it with cheese and baked until it was melted.

I think if you added black olives to this yall would like it even more. Wes and Bekka are not big fans of olives.
