Blue Bibb Salad

2 heads of Bibb lettuce-wash and chop
3/4 c red onion strings
1/2 c fresh blueberries-wash & drain
7 oz package of glazed walnuts
Blueberry Vinaigrette-see below
Crumbled gorganzola

In a large bowl, mix lettuce, onion, berries, and walnuts. Plate individually and top with dressing and gorganzola.

Blueberry Vinaigrette

1 c fresh blueberries-wash & dry
2/3 c olive oil
1/3 c balsamic vinaigrette
2 T water
2 T honey
1/2 t salt

In the bowl of a food processor, combine all of the ingredients and pulse smooth. Cover and chill until serving time.
