Pineapple Coleslaw

3 C Shredded Cabbage
1/2 C Shredded Carrots
2 Tbsp kosher salt
3/4 C Drained Crushed Pineapple
2 Tbsp. Vinegar
1 Tbsp Sugar
2/3 C Mayo (not Miracle Whip)
Pepper to taste

Combine cabbage & carrots. Mix in salt. Let sit for an hour or so to draw out excess moisture. Drain. Mix in the remainder of ingredients. Adjust the seasonings as desired. Cover and chill at least 6 hrs. Variation: Through in about 1 c mini marshmallows
