FRESH CORN PUDDING
FRESH CORN PUDDING
Ingredients
2 C. fresh corn
2 eggs
2 Tbs. melted butter
2 C. milk, scalded
1 green bell pepper, finely chopped, optional
2 Tbs. finely chopped onion, optional
1 tsp. salt
1/8 tsp. pepper
Directions
Preheat oven 350
Beat eggs; whisk in milk and melted butter. Add corn, green bell pepper, onion, and seasonings.
Pour into a greased 1 ½-qt. baking dish.
Set dish in a pan of hot water and bake for about 1 hour, until corn pudding is set. A knife should come out clean when inserted in center.
Yield: 6 servings
