To make home cut fries fried in oil. Cut them into strips. Fry them until they are tender. Drain and cool to room tempature. Fry the rest. When all of them are done. Refry until they are brown. I do not know how this works but it makes them more like the ones you get at a fast food resturant.

Oven fried fries. I cut them into little cubes. Place them in a bag with a little oil. Shake well and place on cookie sheet in single layer. Bake at 450 until brown

I also shake onion soup mix on them.

Your oven fries sounds a bit like the Duggar's recipe in their book. My husband is hooked on the recipe. I just take a potato each and cut them into 6 wedges. I put them in a bag with a little oil and shake. Then put in a single layer on the cookie sheet. I sprinkle seasoned salt, pepper and garlic on them. I have even tried Parmesan cheese. Bake at 450 for around 20 mins. They are really good. I bet they are good with the onion soup mix. I will have to look up a recipe for onion soup mix and try it.
